As a college student, eating out at restaurants or grabbing a quick meal from a burger stand can get very expensive. So when I am working on my waistline and my budget, I try to recreate dishes from some of my favorite restaurants! This particular sandwich is my recreation of a popular restaurant/brewery’s popular menu item. This chicken sandwich is loaded with avocado, Anaheim chilies and a mild spicy mayonnaise that is sure to satisfy any spicy craving.
Spicy Avocado Chicken Sandwich
- 2 slices Sourdough bread
- 1/2 avocado sliced
- 1/2 chicken breast sliced thin
- 1/2 roasted Anaheim chili pepper
- 1 slice Monterey jack cheese
- 1 tablespoon mayonnaise
- Cayenne pepper ( to preference )
- California chili pepper powder (to preference
What you need:
Preheat your grill, meanwhile prepare your spicy mayonnaise by combining the mayonnaise, Cayenne pepper, and California Chili pepper powder in a small bowl and set aside. Prepare the chicken breast by seasoning with salt and Cayenne pepper, grill until fully cooked, about 4 minutes total. While the chicken is on the grill toast the slices of sourdough bread.
Just before the chicken breast is done, add a slice of Monterrey jack cheese on the chicken and allow it to melt.
To assemble your sandwich, take one slice of sourdough bread and add sliced avocado, top with Monterrey jack cheese covered chicken breast and layer on the roasted Anaheim chili. Cover the other slice of sourdough with the spicy mayonnaise and then top the sandwich. Enjoy!
