Persimmon Pomegranate Fruit Salad

Embrace this new season with a trip to your local farmers market and enjoy the fresh fruits and vegetables that fall has to offer! This simple yet savory dish is the perfect transitional fruit salad from summer into fall. The combination of  fresh mint, sweet honey, and lemon juice uniquely tops off the salad with a refreshing sensation!

Persimmon Pomegranate Fruit Salad

Yield: Serves 4


  • 3 Fuyu persimmons, peeled, chopped, seeds discarded
  • 3/4 Cup pomegranate seeds
  • 1 Fuji apple (or Granny Smith), peeled, cored, chopped
  • 7-10 Fresh mint leaves, thinly sliced crosswise (stack them, then roll them up like a cigar and take slices from the end)
  • 2 teaspoons lemon juice
  • 1 teaspoon honey


Gently toss all ingredients together and enjoy!!
